  • Sake: 20ml

  • Sugar: 20g

Instructions

  1. In a saucepan, combine mirin, sake, and sugar. Heat over medium heat, reducing the liquid by half while allowing the alcohol to evaporate.

  2. Remove from heat and add the miso. Mix well with a wooden spatula, then return to heat and simmer until the mixture thickens to a paste-like consistency.

Storage

Store the finished miso paste in an airtight container in the refrigerator. It should keep for approximately 3 weeks.This versatile miso paste can be used as a flavoring in various dishes, as a condiment for bento boxes, or as a delicious accompaniment to rice.

Miso paste Variations
