Green beans with sesame dressing- Japanese home cooking class in Tokyo

Goma-ae is one of Japan's traditional "aemono" (dressed dishes). It refers to a dish where boiled vegetables or leafy greens are mixed with a dressing made from ground roasted sesame seeds. In addition to vegetables, it can also be used with seafood and other ingredients, making it versatile and compatible with various types of food.

Ingredients (for 2 servings)

· Green beans: 150g

·  White sesame seeds (ground): 2-3 tablespoons

·  Sugar: 2 teaspoons

·  Soy sauce: 2 teaspoons

·   Dashi stock: 2 teaspoons

·   Salt: to taste

Instructions

1.  Wash the green beans and trim off both ends. Remove any strings if present.

2. Bring a pot of salted water to a boil and cook the green beans for 2-3 minutes.

3. Drain the cooked beans and immediately plunge them into cold water to stop the cooking process. Pat them dry thoroughly.

4. Cut the beans into 3-4 cm pieces.

5  In a bowl, mix together the ground white sesame seeds, sugar, soy sauce, and dashi stock.

6.  Add the cut green beans to the bowl and toss them with the sesame dressing.

7.  For best flavor, let the dish sit for about 30 minutes before serving to allow the flavors to meld.
