Ingredients (for 2 servings);
10 chicken wings (mid-joint)
1 clove of garlic
Salt and pepper to taste
1 tablespoon cornstarch
1 tablespoon vegetable oil
Sauce;
2 tablespoons sake
1.5 tablespoons mirin
1 tablespoon sugar
1.5 tablespoons soy sauce
Instructions;
Thinly slice the garlic and remove the core.
Season the chicken wings with salt and pepper, then lightly coat with cornstarch.
Heat the vegetable oil and garlic in a skillet over low heat.
Place the chicken wings skin-side down and cook over medium heat. Once browned, flip and cook for another 3-5 minutes until cooked through.
Keep the heat at medium and add the sauce ingredients. Simmer until the sauce thickens and coats the wings with a glossy finish.
Plate and serve. Optionally garnish with sesame seeds, shredded green onions, or shichimi togarashi (Japanese seven-spice blend).
Tips;
If the garlic starts to burn, move it to the edge of the skillet.
Piercing the chicken wings with a fork helps the flavors penetrate better.
Total cooking time is about 15-20 minutes.
